Listeria is a family of bacteria consisting of ten species.
One of these, Listeria monocytogenes, causes listeriosis, a disease that affects humans and animals.
Listeriosis is one of the most serious foodborne infectious diseases, often severe, with high hospitalization and mortality rates. Listeria is found in soil, plants, and water.
Animals, including cattle, sheep and goats, can also carry the bacterium.
Consumption of contaminated food or feed is the main route of transmission for humans and animals.
Listeria monocytogenes is an environmental microorganism that can contaminate food at all stages of production, handling, and storage: at the distribution level, but also at the domestic level.
Ready-to-eat foods, which, due to their chemical and physical characteristics, support the growth of the microorganism, represent the most at-risk category. These include fresh, soft, and blue cheeses (gorgonzola, Roquefort, Camembert, Robiola, Taleggio, Brie, Brique) and smoked fish (salmon, tuna, swordfish, trout, mackerel, herring). Cooking at temperatures above 65°C kills the bacteria.
However, the Listeria bacterium can be present in various ready-to-eat foods and, unlike many other food-borne bacteria, it tolerates salty environments and low temperatures (between +2°C and 4°C).
Two distinct test kits are available: one for the specific detection of Listeria spp, the other for the determination of Listeria monocytogenes.
