The term salmonellosis refers to a group of diseases caused by Salmonella, bacteria normally present in the gastrointestinal tract of many animals.
The main source of infection is sick animals (cattle, turkeys, chicks, game, etc.), contaminated food and water.
The foods most frequently at risk are meat from sick animals, but sometimes also healthy meat contaminated at a later time.
Minced meat and cured meat and offal products are particularly important, as they provide the most favorable conditions for salmonella to multiply.
The eggs can be contaminated already in the ovaries of the infected animal or after being laid, so they can be found on the shell or exceptionally inside, due to the porosity of the shell itself.
Milk and its derivatives, seafood, fish and other variously handled foods can also cause salmonellosis.
